Our Fire Cracker Calamari starts with calamari hand-cleaned and cut in-house, then dusted in a delicate seasoned flour for a feather-light crunch. We fry it hot and fast so the inside stays tender, then toss it with finely sliced jalapeños, watermelon radish and chives for colour, heat and crunch.
